For those of us who live in urban areas, getting our hands on some delicious Girl Scout cookies can be hard, unless Betty in accounting does all the sales for her kid at the office. If you miss chowing down on Samoas or Thin Mints, you are in luck because there are some really good Girl Scout Cookie Recipes online.

   PEANUT BUTTER PATTIE CAKES

   For Shortcakes:
   1 3/4 cups all purpose flour
   1/2 cup granulated sugar
   1 tablespoon unsweetened cocoa powder
   1 teaspoon cream of tarter
   3/4 teaspoon baking soda
   1/2 teaspoon salt
   1/3 cup unsalted butter, chilled
   1/3 cup buttermilk
   1 large egg
   1 1/2 teaspoons vanilla extract

   For Filling:
   1 box Peanut Butter Patties Girl Scout cookies, crushed
   8 ounces cream cheese
   1 tablespoon honey

   For Decoration:
   4 ounces white chocolate, melted
   1/2 cup chopped peanuts

   Make shortcakes:
   Preheat oven to 375 degrees. In a large bowl, stir together flour, sugar, cocoa, cream of tartar, baking soda, and salt. Cut the butter into 1/2 cubes and distribute them over the flour mixture. With a pastry blender, cut the butter until the mixture resembles coarse crumbs. In a small bowl, stir together the buttermilk, egg, and vanilla. Add the milk mixture to the flour mixture and stir to combine. The dough will be very sticky. Drop the dough in spoonfuls onto a greased baking sheet. Bake for about 15 minutes.

   Make filling:
   Mix cream cheese and honey in food processor until light and fluffy.

   Assembly:
   Cut all the shortcakes in half widthwise (like an Enlish muffin). Spread the shortcake halves with the cream cheese mixture and top with crushed Peanut Butter Patties Girl Scout cookies. Put all of the halves together (like a sandwich). Drizzle melted white chocolate over the top and sprinkle with crushed peanuts.

   Makes 16 shortcakes.

We have a squirrel that lives out on our ledge and he will eat anything! He gets a little testy when he wants food. We can’t really use the back stairs when he is out there, or he will chase us around, panhandling for nuts.

If you don’t file yourself under the 55+, retiree, ready to hit the open road in a painfully ugly Winnebago crowd, then maybe the Verdier-Light Caravan, or Hipster RV, is more you speed.

Link to the The Spinning Silhouette Optical Illusion

Supposedly, if you stare at the clockwise spinning silhouette found at the link above, she will appear to spin counter-clockwise. I starred at the naked silhouette for nearly 30 minutes before I realized even where I was and it flat out did not work for me.

It says that it takes a lot of focus, which I devoted, but maybe all that mindless staring as a young child has finally taken its toll on me.

Give it a go, I am hearing that it is actually really cool.

In this age of social dis-connectivity and lack of human contact, the effects of the Free Hugs campaign became phenomenal.

This is a great campaign and you should read how the campaign got started, join the hug movement, or show your support.

It was a pleasure to read how someone was out there doing this, just giving hugs, we should all feel welcomed wherever in the world we are.

Juan Mann was made into a foreigner in his own homeland, but through this project he was able to really connect with people, all over the world now, in an amazingly simple and human way.

Nerdcore is the new Hardcore…

The Blue Ribbon Glee Club is an A’cappella-Punk-Indie choir group that is actually amazing live. They recently played at the 3rd Annual Publishers Ball here in Chicago, and they really got the nerdcore kids going. They sang all the favorites, Where is my mind, Waiting Room, Spanish Bombs, etc.
